Sticky Pineapple Chicken Kabobs


Makes: 7-8 kabobs – fed 4 people generously

Total Time: 30-40 minutes

Ingredients:

Kabobs:

  • 1 lb of chicken
  • 2 bell peppers
  • 1 pineapple
  • 1 red onion
  • salt and pepper

Sauce:

  • 1/4 cup coconut aminos
  • 2 Tbs tomato paste
  • 2 Tbs maple syrup
  • 1 tsp garlic powder
  • 1 tsp chili powder

What to do:

  • Preheat your grill to medium heat (you can also do this in your oven at 450 degrees for about 20 minutes, rotating your kabobs halfway through)
  • Whisk the sauce ingredients together in a small bowl and set aside
  • Dice your chicken and veggies into kabob size pieces and build your kabobs
  • Use a brush to coat your kabobs with the sauce completely
  • Grill your kabobs for about 7-10 minutes then rotate them and grill for another 7 minutes
