Zucchini & Squash Bake

Makes: 4 servings

Total Time:  35-40 minutes

Ingredients:
  • 1 lb of chicken cut into small pieces
  • 2 medium zucchini cut into quarter size pieces
  • 2 medium squash cut into quarter size pieces
  • 1/4 of red onion thinly sliced
  • 2 tsp of Ghee
  • 1/2 TBS Italian seasoning
  • 1 tsp garlic powder
  • sea salt and pepper
  • 1 jar of your favorite tomato based pasta sauce with no sugar added *I use Rao’s brand because it typically does not have sugar added

What to do:

  • Preheat oven to 350 degrees
  • Chop up veggies and season with sea salt and pepper
  • Heat a medium skillet over medium heat and add 1 tsp of ghee
  • Once warm, add veggies and saute for 8-10 minutes
  • While veggies are sauteing, dice up your chicken *remember to stir your veggies tho
  • Season the chicken with the Italian seasoning and garlic powder
  • Removed veggies from heat and place in medium size bowl
  • Add 1 tsp of ghee to the same skillet and cook chicken until it starts browning on the outside and is almost cooked all the way through
  • Use a slotted spoon to remove chicken from heat and add to the bowl with the veggies
  • Pour about half of your sauce over the food and mix well; add more sauce if you’re feeling saucy!
  • Pour into an 11×9 baking dish and bake for 15 minutes
  • Enjoy!
