Makes: 45 -55 cookies
Total Time: 45-50 minutes
Ingredients:
- 2 cups almond butter (or 1 cup almond butter + 1 cup sunflower seed butter)
- 2 cup coconut sugar
- 2 eggs (whisked)
- 1/2 cup unsweetened cocoa powder
- 1 scoop of Chocolate Coconut Collagen Fuel
- 2 tsp baking soda
- 2 tsp vanilla extract
- 1/2 tsp sea salt
- 1/2 cup – 1 cup Enjoy Life Mini Chocolate Chips
What to do:
- Preheat oven to 350 degrees and get ready to get your hands dirty
- Line your cookie sheet with some parchment paper
- In a large bowl, mix together the almond butter and coconut sugar; use your hands here to pinch the two together very well
- Add eggs and mix with a large spoon
- Add your cocoa powder and collagen and mix with your hands again to mix the dough up very well – this is a very thick and sticky dough but that’s how it should be!
- Add baking soda, vanilla and salt and mix well
- Fold in your chocolate chips and mix until everything is combined
- Use your hands to roll up some small cookie balls (about 1/2 TBS worth of cookie dough because these cookies will spread a lot!) and place them on your prepared cookie sheet
- Bake for 10 minutes
- I had about 3 batches worth of 12-15 cookies
- IMPORTANT – let cookies cool on baking sheet for at least 5 minutes before removing them or they will fall apart
