Triple Chocolate Collagen Cookies

Makes: 45 -55 cookies

Total Time: 45-50 minutes

Ingredients:

  • 2 cups almond butter (or 1 cup almond butter + 1 cup sunflower seed butter)
  • 2 cup coconut sugar
  • 2 eggs (whisked)
  • 1/2 cup unsweetened cocoa powder
  • 1 scoop of Chocolate Coconut Collagen Fuel
  • 2 tsp baking soda
  • 2 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1/2 cup – 1 cup Enjoy Life Mini Chocolate Chips

What to do:

  • Preheat oven to 350 degrees and get ready to get your hands dirty
  • Line your cookie sheet with some parchment paper
  • In a large bowl, mix together the almond butter and coconut sugar; use your hands here to pinch the two together very well
  • Add eggs and mix with a large spoon
  • Add your cocoa powder and collagen and mix with your hands again to mix the dough up very well – this is a very thick and sticky dough but that’s how it should be!
  • Add baking soda, vanilla and salt and mix well
  • Fold in your chocolate chips and mix until everything is combined
  • Use your hands to roll up some small cookie balls (about 1/2 TBS worth of cookie dough because these cookies will spread a lot!) and place them on your prepared cookie sheet
  • Bake for 10 minutes
    • I had about 3 batches worth of 12-15 cookies
  • IMPORTANT – let cookies cool on baking sheet for at least 5 minutes before removing them or they will fall apart
  • Enjoy!
