Makes: 5 individual pies
Total Time: Approximately 1 hour 45 minutes
Ingredients:
- 6 apples
- Juice of 1 lemon
- 3 TBS coconut sugar
- 1 TBS coconut flour
- 1/2 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp sea salt
- 1 egg beaten (for egg wash)
I used a really easy recipe for the pie crust from this website https://www.paleorunningmomma.com/paleo-pie-crust-grain-free-dairy-free/
Or you could buy a pre-made pie crust from the store but it will probably contain too much sugar
What to do:
- Make your crust and place in the refrigerator
- Cut the top 1/2 inch of the apples off and throw away
- Use a spoon or melon baller and a knife to dig out the insides of 5 of the apples – leave 1/4 inch of apple next to the skin
- Place apples in a 9 X 11 inch baking dish and pour water in bottom of dish 1″ high
- Throw away the cores and chop up the apple you spooned out from the last step and place in a bowl
- Peel and dice up the 6th apple and place in the bowl as well
- Add the rest of the ingredients besides the egg and mix well
- Pour apple mixture back into each apple
- Bring out your pie crust and roll out between two pieces of parchment paper until it is 1/4 inch thick
- Use a large cup (I used a large Tervis Tumbler) to create 5 small pie toppers
- I had to do 4 first then roll up the dough and do the last one separate – side note – I had enough dough to make a 6th pie if you’re making 6
- Cut a cross in the middle of each pie crust for ventilation and carefully transfer your crust to each apple pie
- Beat your egg in a bowl and use a brush to paint the tops of each pie
- Cover with aluminum foil and bake for 25 minutes
- Remove the foil and bake for 25-30 more minutes until the crust is as brown as you’d like it to be
- Let pies cool at room temperature completely until you serve them and enjoy!
