Collagen Cookie Balls

Makes: 24 cookies

Total Time:  35-40 minutes (includes cooling time)

Ingredients:

  • 3/4 cup sunflower seed butter
  • 1/4 cup raw honey
  • 2 TBS coconut oil
  • 2 eggs
  • 3 TBS collagen powder
  • 1 cup of cassava flour
  • 1 tsp baking powder
  • 1 cup of dark chocolate chips

What to do:

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper
  • In a large bowl, mix together sunflower butter, honey, coconut oil and eggs together
  • In a medium bowl, mix together the flour, collagen powder, and baking powder
  • Sift the dry ingredients into the bowl with the wet ingredients and mix well
    • you will end up with a very sticky ball of dough
  • Fold in the chocolate chips
  • Let dough chill in the refrigerator for about 10 – 15 minutes (you can skip this step but this will help you get softer chewier cookies)
  • Use a cookie scoop or melon baller to scoop out the dough, roll into a ball and place onto parchment paper
  • Bake cookies for 15 minutes
