Makes: 24 cookies
Total Time: 35-40 minutes (includes cooling time)
Ingredients:
- 3/4 cup sunflower seed butter
- 1/4 cup raw honey
- 2 TBS coconut oil
- 2 eggs
- 3 TBS collagen powder
- 1 cup of cassava flour
- 1 tsp baking powder
- 1 cup of dark chocolate chips
What to do:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper
- In a large bowl, mix together sunflower butter, honey, coconut oil and eggs together
- In a medium bowl, mix together the flour, collagen powder, and baking powder
- Sift the dry ingredients into the bowl with the wet ingredients and mix well
- you will end up with a very sticky ball of dough
- Fold in the chocolate chips
- Let dough chill in the refrigerator for about 10 – 15 minutes (you can skip this step but this will help you get softer chewier cookies)
- Use a cookie scoop or melon baller to scoop out the dough, roll into a ball and place onto parchment paper
- Bake cookies for 15 minutes
