Taco Potatoes

These potatoes are absolutely delicious! You guys have got to try these as soon as possible! They’re super easy with very little clean up. Another plus – they’re ready within 35 minutes making it perfect for any week night! Enjoy!


Makes: 3-4 servings

Total Time: 35 minutes

Ingredients:

  • 1.5 lb of fingerling baby potatoes 
  • Olive oil 
  • 2 tbs taco seasoning 
  • 2 tbs of sir kinsingtons sunflower oil mayo or avocado oil mayo 
  • 3 tbs of adobos sauce from a can of chipotle peppers in adobo sauce (the peppers will keep for a long time in an air tight container in your fridge)

What to do:

  • Preheat oven to 475 and line baking sheet with foil
  • Place fingerling potatoes in a large pot and cover with water; bring to a boil
  • Turn fire to medium and cover; cook for 10 minutes or until they can be easily stabbed with fork
  • Drain potatoes and place on the baking sheet and flatten them with the fork or a potato masher
  • Brush the potatoes with some olive oil and sprinkle with the taco seasoning 
  • Bake potatoes for 20 min tossing them half way through 
  • While potatoes are cooking mix together your mayo and adobo sauce 
  • Once potatoes are done drizzle your sauce over it and enjoy
