Makes: 5-6 servings
Total Time: 35 minutes
Ingredients:
- 1 lb ground turkey
- avocado oil
- 1 clove of garlic, minced
- 1/4 onion, diced
- 1 jalapeno
- 1 TBS chopped cilantro
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp sea salt
- 1 can of tomato sauce
- 1/4 cup chicken bone broth
- 1 can of organic low sodium black beans
- 1 head of iceberg lettuce
- Taco toppings: sour cream, salsa, hot sauce, jalapenos, avocado, etc.
What to do:
- Dice your onion and jalapeno into small pieces; mince your garlic clove; chop your cilantro
- Carefully remove large pieces of lettuce from the head of iceberg and wash thoroughly; set aside
- Heat avocado oil in a large skillet over medium high heat
- Add your onion, garlic, and cilantro and saute for about 2 minutes
- Add your turkey, salt, garlic powder and cumin; break up into small bite size pieces and brown meat for about 4-5 minutes until completely cooked through
- Add your tomato sauce and chicken broth and mix well; turn heat to low and simmer for about 4 minutes
- Add your black beans and mix up; simmer for another minute until most of the liquid has cooked out
- Assemble your tacos into your lettuce wraps and top with your favorite taco toppings and enjoy!
- Make sure you have a lot of napkins – these guys can get a bit messy 🙂
