Taco Lettuce Wraps

 

 

Makes:  5-6 servings

Total Time:  35 minutes

Ingredients:
  • 1 lb ground turkey
  • avocado oil
  • 1 clove of garlic, minced
  • 1/4 onion, diced
  • 1 jalapeno
  • 1 TBS chopped cilantro
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1 can of tomato sauce
  • 1/4 cup chicken bone broth
  • 1 can of organic low sodium black beans
  • 1 head of iceberg lettuce
  • Taco toppings: sour cream, salsa, hot sauce, jalapenos, avocado, etc.

What to do:

  • Dice your onion and jalapeno into small pieces; mince your garlic clove; chop your cilantro
  • Carefully remove large pieces of lettuce from the head of iceberg and wash thoroughly; set aside
  • Heat avocado oil in a large skillet over medium high heat
  • Add your onion, garlic, and cilantro and saute for about 2 minutes
  • Add your turkey, salt, garlic powder and cumin; break up into small bite size pieces and brown meat for about 4-5 minutes until completely cooked through
  • Add your tomato sauce and chicken broth and mix well; turn heat to low and simmer for about 4 minutes
  • Add your black beans and mix up; simmer for another minute until most of the liquid has cooked out
  • Assemble your tacos into your lettuce wraps and top with your favorite taco toppings and enjoy!
  • Make sure you have a lot of napkins – these guys can get a bit messy 🙂
