This cocktail is super fresh and very yummy. It would be perfect for any celebration such as New Years Eve or a birthday party. Who doesn’t love a champagne toast!? The mixture goes a long way – we had extra mix after a whole bottle of champagne. Pour these up into champagne flutes or just over ice in a cocktail glass and enjoy! Cheers!
Makes: about 6-10 cocktails
Total Time: 15 minutes
Ingredients:
- 1/2 cup water
- 1/3 cup of honey
- 3 cups of blackberries
- Champagne
- you will need a tight mesh strainer and a rubber spatula as well
What to do:
- In a small pot mix water and honey and bring to a boil
- Lower to a simmer for about 5-8 minutes and cool down before storing it in the refrigerator until you’re ready to use
- Blend the honey mixture and black berries very well in a high speed blender
- Strain the blackberry mix into a bowl – use spatula to help this process
- Pour some of the mix into separate glasses about 1/3 to 1/4 the way full and top with champagne
- Caution!! It will bubble over and make a mess! Pour a little bit in at a time
