Total Time: 45 minutes
Ingredients:
- 4 chicken breasts + sea salt, pepper, and Italian seasoning
- 8 plum tomatoes
- 1/4 cup olive oil
- 1 TBS of fresh thyme
- 1/2 tsp crushed red pepper
- 1 tsp minced garlic
- sea salt and pepper to taste
What to do:
- Preheat your oven to 350 degrees
- Slice your tomatoes in half lengthwise and toss in a bowl with your olive oil, thyme, red pepper flakes, minced garlic and some salt and pepper
- Place the tomatoes on a baking sheet so that the cut side is face upward and bake for 35-45 minutes until tomatoes are shriveled up and tender
- While your tomatoes are baking, season your chicken with some sea salt, pepper, and Italian seasoning
- Grill your chicken on a medium high grill for about 5-7 minutes per side (time depends on how thick your chicken breasts are; you want your meat thermometer to read 160 degrees when you stick it in the thickest part of your chicken)
- Remove your tomatoes and let cool a few minutes and dice them up
- Serve your chicken with the tomato confit on top and pair it with on of my healthy sides
