Tomato Confit Chicken

Makes: 4 servings

Total Time: 45 minutes

Ingredients:

  • 4 chicken breasts + sea salt, pepper, and Italian seasoning
  • 8 plum tomatoes
  • 1/4 cup olive oil
  • 1 TBS of fresh thyme
  • 1/2 tsp crushed red pepper
  • 1 tsp minced garlic
  • sea salt and pepper to taste

What to do:

  • Preheat your oven to 350 degrees
  • Slice your tomatoes in half lengthwise and toss in a bowl with your olive oil, thyme, red pepper flakes, minced garlic and some salt and pepper
  • Place the tomatoes on a baking sheet so that the cut side is face upward and bake for 35-45 minutes until tomatoes are shriveled up and tender
  • While your tomatoes are baking, season your chicken with some sea salt, pepper, and Italian seasoning
  • Grill your chicken on a medium high grill for about 5-7 minutes per side (time depends on how thick your chicken breasts are; you want your meat thermometer to read 160 degrees when you stick it in the thickest part of your chicken)
  • Remove your tomatoes and let cool a few minutes and dice them up
  • Serve your chicken with the tomato confit on top and pair it with on of my healthy sides
