Sweet Onion Pork Chops

Makes: 4 servings

Total Time: 30-35 minutes

Ingredients:
  • 4 pork chops 
  • sea salt and black pepper
  • 4 TBS unsalted grass fed butter, ghee, or coconut oil
  • 1 large onion
  • 1/4 cup dijon mustard
  • 1/4 cup balsamic vinegar
  • 1.5 TBS raw honey

What to do:

  • Heat oven to 350 degrees
  • Season both sides of the pork chops with the sea salt and pepper
  • Chop your onion up
  • Heat 2 TBS butter, ghee, or coconut oil in a large oven proof skillet over high heat 
  • Once melted, add the pork chops and sear on both sides for 2-3 minutes each and then set them aside
  • Heat the other 2 TBS of your butter and add your onion to the skillet
  • Saute for 8-10 minutes or until translucent/browning
  • Add in your mustard, vinegar and honey and mix everything together well
  • Add your pork chops back into the skillet and coat the pork chops with the onion mixture
  • Place the skillet in the oven for 15-20 minutes or until your meat thermometer reads 145 degrees
  • I only cooked this dish with 2 pork chops and had a ton of onions left over which I mixed into a bag of green beans and it was scrumptious! Try that out or serve your chops with one of my tasty side dishes and enjoy!
