Makes: 4 servings
Total Time: 30-35 minutes
Ingredients:
- 4 pork chops
- sea salt and black pepper
- 4 TBS unsalted grass fed butter, ghee, or coconut oil
- 1 large onion
- 1/4 cup dijon mustard
- 1/4 cup balsamic vinegar
- 1.5 TBS raw honey
What to do:
- Heat oven to 350 degrees
- Season both sides of the pork chops with the sea salt and pepper
- Chop your onion up
- Heat 2 TBS butter, ghee, or coconut oil in a large oven proof skillet over high heat
- Once melted, add the pork chops and sear on both sides for 2-3 minutes each and then set them aside
- Heat the other 2 TBS of your butter and add your onion to the skillet
- Saute for 8-10 minutes or until translucent/browning
- Add in your mustard, vinegar and honey and mix everything together well
- Add your pork chops back into the skillet and coat the pork chops with the onion mixture
- Place the skillet in the oven for 15-20 minutes or until your meat thermometer reads 145 degrees
- I only cooked this dish with 2 pork chops and had a ton of onions left over which I mixed into a bag of green beans and it was scrumptious! Try that out or serve your chops with one of my tasty side dishes and enjoy!
