Sheet Pan Steak Fajita Bowls

These fajita bowls are freaking delicious!! And ready in 20 minutes! Why would you not make these on your busy week nights?! Or double it for a party and make a batch of my Jalapeno Margaritas! Cheers!


Makes: 4 servings

Total Time:  20-25 minutes

Ingredients:

Steak Tips

  • 1 lb organic grass fed steak tips
  • 1 TBS olive oil
  • juice of 1/2 a lime
  • 1 tsp sea salt
  • 1/2 tsp pepper

Peppers and onion

  • 2 large bell peppers
  • 1 onion sliced
  • 1 TBS olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp pepper

Bowls

  • shredded lettuce
  • 1 can of organic black beans
  • optional toppings: salsa, hot sauce, jalapenos, shredded cheese, cilantro, sour cream, etc

What to do:

  • Preheat your oven to 400 degrees and spray a sheet pan with some olive oil or avocado oil cooking spray
  • Slice your peppers and onion and mix them together in a large bowl with the rest of the ingredients for the peppers and onion
  • Place your veggies on the sheet pan and bake for 12 minutes
  • In the same bowl, mix the steak tips together with the rest of the ingredients for the steak tips and set aside
  • After the 12 minutes is up, pull the veggies out and turn your oven to broil
  • Mix your veggies around and separate them to either side of the sheet pan and place your steak tips in the middle of the pan
  • Bake for 5-8 more minutes or until your meat thermometer reads 145 degrees
  • While your food is baking, rinse your black beans and heat them in a small pot over low heat
  • Prepare your bowls:
    • Add shredded lettuce on bottom and top with veggies and steak tips and black beans followed by your favorite fajita toppings and enjoy!
