Pico Guac Burger

Makes: 4 servings

Total Time:  15-20 minutes

Ingredients:
  • 2 avocados
  • 1 head of lettuce
  • Optional: Grilled Pineapple, Avocado Oil Mayo, hot sauce, Sir Kensingtons Ketchup and mustard
Burger Patties:
  • 1.5 lb of grassfed organic beef
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder

Pico De Gallo:

  • 2 large tomatoes seeded and diced
  • 1/2 onion finely diced
  • 1 jalapeno finely diced
  • 1 tsp sea salt
  • Juice of 1.5 lime
  • 1/4 cup of cilantro

What to do:

  • Cut avocados in half and remove the pits
  • Mix the spices into the ground beef well and make 4 patties
  • Grill the burgers and avocados; burgers – for about 5-7 minutes on each side (shorter if you want rare; longer if you want well done) avocados – face down for about 5 -7 minutes until you have some grill marks across the greens
  • Dice your tomatoes and remove the seeds/juice; only want the outside of the tomato and pour into a small mixing bowl
  • Dice the onion and jalapeno into very small pieces; add to bowl
  • Add the sea salt, lime juice, and cilantro and mix well; place in refrigerator until burgers are ready
  • Carefully remove 4 pieces of lettuce from the head of lettuce trying not to break apart to use instead of a bun
  • Assemble your burger:
    • lettuce down, burger on top with any condiments you want, the grilled avocado (either sliced or mashed up), and top with pico de gallo
