You gotta love one pot meals! This pasta is absolutely perfect for a busy week night. It is so quick and easy to make with very little clean up. Best of all, it’s delicious! Next time you’re in a pinch and need a quick meal, try this one out.
Makes: 6 servings
Total Time: 20-25 minutes
Ingredients:
- 1 box of chickpea pasta (or your favorite veggie pasta, GF pasta, or regular pasta)
- olive oil
- 1 medium onion
- 1 tsp garlic minced
- 1 lb grass fed organic beef
- 2 tbs taco seasoning
- 2.5 cups water
- 1 cup salsa
- 1 can black beans – drained and rinsed
- 1 can of corn – drained and rinsed
- Juice of 1 lime
- Top with your favorite taco toppings i.e. avocado, cilantro, hot sauce, jalapeño etc
What to do:
- Heat oil in a dutch oven (or just a large skillet that has a lid) over medium high heat
- Add your chopped onions and saute for a few minutes
- Add your minced garlic and saute for a minute
- Add your beef and brown until cooked through
- Drain the grease
- Add in your taco seasoning and 0.5 cup of water and mix well
- Add in your salsa, the rest of the water and pasta shells; cover and cook on low for 10 minutes
- After 10 minutes, add your corn and black beans and lime juice; cover and simmer for another 5 minutes
- Top with your favorite taco toppings and enjoy!
