Makes: 4 servings
Total Time: 20 minutes
Ingredients:
- 2 TBS olive oil or melted ghee
- 1 lb grass fed ground beef
- 1 tsp cumin
- 3 tsp chili powder
- 1/2 tsp sea salt
- 1 TBS tomato paste
- 1/2 cup water
- 20 oz bag of frozen hash browns; thawed out
- your favorite nacho toppings: shredded lettuce, diced tomatoes, jalapenos, shredded cheese, hot sauce, etc.
What to do:
- Preheat the broiler and spray sheet pan with cooking spray or line with parchment paper
- Spread your hash browns out on the sheet pan and toss them with the olive oil or ghee and 1 tsp of chili powder; mix well and lay out into a flat layer
- Broil for about 8-10 minutes until browning
- After about 10 minutes, stir up the hash browns with a spatula and return to broiler for another 6-8 minutes
- While potatoes are broiling, brown your meat in a medium skillet over medium heat until no longer pink
- Add cumin, 2 tsp of chili powder, 1/2 tsp salt and mix well
- Add tomato paste and mix well; simmer for 1-2 minutes
- Add 1/2 cup of water and mix well
- Simmer for about 2-5 minutes until water has almost completely reduced
- Top your hash browns with your meat, add your favorite toppings and enjoy!!
