One of the best things about growing up in the south is all of the amazing food! A favorite of mine is the classic low country boil. Every summer my family would go on a beach trip and my dad would bring the gigantic stock pot and make the most delicious low country boil!! Unfortunately, it would take him about half a day to get it just right. I have finally found a way to have that delicious dish within 30 minutes making it perfect for any week night meal. It’s not dad’s amazing low country boil but it’s still made with love and tastes delicious! Enjoy!

Total Time: 30 minutes
Ingredients:
- 8 jumbo shrimp (I buy frozen and thaw them in the fridge over night)
- 2 tsp Old Bay seasoning (or your favorite seafood seasoning)
- 6 small red skin potatoes
- 2 links of andouille sausage
- 1 large ear of corn
- 2 TBS ghee
- 1 lemon – cut into two thin slices
- 1 scallion
- Optional: toast for dippin’
What to do:
- Pre-heat your grill to medium high (if you don’t have a grill you can bake these in the oven; pre-heat your oven to 425 degrees and you’ll bake the packets for 15-20 minutes)
- Dice your potatoes and sausage links into bite size pieces
- Break your corn in half
- Toss your shrimp with the Old Bay
- Place a large piece of aluminum foil out on a flat surface
- Divide the ingredients evenly among the aluminum layering them like so:
- potato slices
- sausage slices
- shrimp
- corn
- melted ghee, 1 or 2 lemon slice, and scallions
- Fold up the ends of the foil and seal the packets
- Place the packets on the grill, cover and cook for about 18-20 minutes
- Serve with some toast
