Lemon Rosemary Chicken

Makes: 4 servings

Total Time:  35-40 minutes

Ingredients:
  • chicken breasts
  • 2 sprigs of rosemary
  • 1 garlic clove mashed
  • 1 TBS rosemary leaves
  • 1 tsp of red pepper flakes
  • 2 tsp sea salt
  • Juice of 1 lemon (save the lemon halves)
  • 1 TBS olive oil
  • 1 pack of button mushrooms

What to do:

  • Preheat oven to 450
  • Crush your garlic clove and top with rosemary leaves, red pepper flakes, and 2 tsp of sea salt and mince until very fine; pour into small mixing bowl
  • Add lemon juice and olive oil and mix
  • Add chicken breasts to bowl and mix to coat the chicken
  • Heat a large skillet (or cast iron skillet) over medium high heat and add chicken upside down
  • Cover and cook for 5 minutes
  • Flip the chicken over and add mushrooms
  • Top with the lemon halves and rosemary sprigs
  • Bake the chicken for 20-25 minutes
    *Make sure you DO NOT touch the skillet with your bare hands!
