Ingredients:
Sauce
- 1 cup raw cashews soaked in water overnight
- 1/4 cup of water
- 3 TBS of nutritional yeast
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1 tsp sea salt

pinch of chili powder
- 2 tsp pimentos (optional)
- 1 tsp fresh lemon juice
Zoodles
- Pre-made zucchini noodles (or 3-4 large zucchinis if you want to make your own zoodles)
- 2 chicken breasts
- 1 Tbs of Italian seasoning
- 1 bag of frozen broccoli
- Optional: fresh parsley for topping
What to do:
- Cook broccoli according to instructions on the bag and strain out the remaining water
- Pound the chicken breasts until they’re 1/4 inch thick and cut into small pieces
- Season the chicken with Italian seasoning and cook in a large sauce pan over medium heat until cooked all the way through
- While chicken is cooking, drain the cashews and place in high speed blender
- Add the remaining sauce ingredients and blend on high until creamy; may have to add 1-3 tsp of water to get to a creamy consistency
- When chicken is cooked, add the broccoli and the sauce in the pan with the chicken; mix well and simmer on low while you prepare your zoodles

In another saute pan, heat some olive oil over medium heat and add your zoodles

Saute zoodles about 5-7 minutes stirring consistently – DO NOT OVER COOK or they will become soaked and soggy
- Add your zoodles to your chicken mixture and mix well
- Serve with some fresh parsley sprinkled on top and enjoy!
