Cottage Pie

Makes: 6 servings

Total Time:  45-50 minutes

Ingredients:

Bottom Layer:
  • 1 tsp ghee
  • 1 lb breakfast sausage
  • 2 links of chorizo (casing removed)
Middle Layer:
  • 2 bell peppers; diced
  • 1 large onion; diced
  • sea salt and pepper
Top Layer:
  • 1 16 oz bag of hash browns thawed
  • 2 TBS ghee; melted
  • 2 tsp salt
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp pepper

What to do:

  • Remove hash browns from freezer and set in sink to thaw
  • Pre-heat oven to 400 degrees
  • Dice up your veggies
Bottom Layer:
  • Heat up ghee over medium/high heat in a large skillet
  • Brown the sausage and the chorizo
  • Use a slotted spoon to transfer meat into a 9×13 baking dish
Middle Layer:
  • In same skillet (using the fat from the meat) saute the peppers and onions with a pinch of salt and pepper
  • Once vegetables are softened, use slotted spoon to place them over the meat
Top Layer:
  • In a large bowl, mix together the hash browns, melted ghee and seasonings along with the remaining fat from the skillet; mix very well
  • Sprinkle the hash browns over the vegetables and gently press down – not too much, you want steam to be able to get through
  • Bake uncovered for 30-35 minutes. Serve with hot sauce and enjoy!
