Total Time: 45-50 minutes
Ingredients:
Bottom Layer:
- 1 tsp ghee
- 1 lb breakfast sausage
- 2 links of chorizo (casing removed)
Middle Layer:
- 2 bell peppers; diced
- 1 large onion; diced
- sea salt and pepper
Top Layer:
- 1 16 oz bag of hash browns thawed
- 2 TBS ghee; melted
- 2 tsp salt
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp pepper
What to do:
- Remove hash browns from freezer and set in sink to thaw
- Pre-heat oven to 400 degrees
- Dice up your veggies
Bottom Layer:
- Heat up ghee over medium/high heat in a large skillet
- Brown the sausage and the chorizo
- Use a slotted spoon to transfer meat into a 9×13 baking dish
Middle Layer:
- In same skillet (using the fat from the meat) saute the peppers and onions with a pinch of salt and pepper
- Once vegetables are softened, use slotted spoon to place them over the meat
Top Layer:
- In a large bowl, mix together the hash browns, melted ghee and seasonings along with the remaining fat from the skillet; mix very well
- Sprinkle the hash browns over the vegetables and gently press down – not too much, you want steam to be able to get through
- Bake uncovered for 30-35 minutes. Serve with hot sauce and enjoy!
