Bacon Wrapped Stuffed Chicken

Makes: 4 servings

Total Time:  60-65 minutes

Ingredients:
  • 2 fat chicken breasts
  • 2 pieces of bacon (or more if you prefer)
  • 1 pack of button mushrooms
  • 1/4 onion
  • 1 TBS fresh rosemary minced
  • 1 tsp minced garlic
  • salt and pepper

What to do:

  • Dice your onion and chop up your mushrooms
  • Mince your rosemary and garlic
  • Saute your onion, mushrooms, garlic and rosemary in a skillet over medium heat until onions are translucent – about 10-15 minutes
  • While your veggies are sauteing, use a sharp knife to butterfly your chicken breasts
  • Place a good amount of your veggies in the middle of your chicken and fold it up
  • Wrap the chickens with the bacon and bake for 35 minutes (or until your meat thermometer reads 165-170)
  • After 35 minutes, turn your oven to broil for 3-5 minutes to crisp up the bacon
