Makes: 4 servings
Total Time: 60-65 minutes
Ingredients:
- 2 fat chicken breasts
- 2 pieces of bacon (or more if you prefer)
- 1 pack of button mushrooms
- 1/4 onion
- 1 TBS fresh rosemary minced
- 1 tsp minced garlic
- salt and pepper
What to do:
- Dice your onion and chop up your mushrooms
- Mince your rosemary and garlic
- Saute your onion, mushrooms, garlic and rosemary in a skillet over medium heat until onions are translucent – about 10-15 minutes
- While your veggies are sauteing, use a sharp knife to butterfly your chicken breasts
- Place a good amount of your veggies in the middle of your chicken and fold it up
- Wrap the chickens with the bacon and bake for 35 minutes (or until your meat thermometer reads 165-170)
- After 35 minutes, turn your oven to broil for 3-5 minutes to crisp up the bacon
