Mini Banana Breakfast Cookies

These mini muffins are so delicious! Especially if you’re having a sweet tooth! They’re pretty filling for what they are. Plus they’re super easy to make and are wonderful to prep for the week. You could add anything else you think would be tasty or you could make these in regular size muffin tins if you want. Make them your own!


Makes:  24+ mini muffins

Total Time: 30 minutes

Ingredients:

  • 2 bananas smashed
  • 1/3 C almond flour
  • 1 TBS coconut flour
  • 1/2 cup ground up walnuts
  • 1/2 cup mini Enjoy Life chocolate chips
  • 1/2 cup of dried craisens
  • 2 scoops of collagen peptides ( I use Vital Proteins collagen peptides in the blue container)
  • 2 Tbs of maple syrup (if bananas are super ripe you could possibly get by with just 1 Tbs  of syrup)
  • 1 tsp vanilla extract
  • pinch of salt
  • pinch of cinnamon
  • any add ins you want – other dried fruits, raisins, cacao nibs, shredded coconut, etc

What to do:

  • Preheat oven to 350°F
  • In a bowl smash bananas until mushy
  • Add in almond flour, coconut flour, crushed nuts, and collagen peptides and mix to combine.
  • Add in maple syrup, vanilla, and sea salt and cinnamon and mix well
  • Fold in any other add-ins you want
  • Scoop mixture into the mini muffin sheet and bake for 17 to 20 minutes
  • Let cool completely before serving
  • Lasts for up to 1 week in the refrigerator or in an air-tight container on the counter, or in the freezer for up to 1 month
