Who doesn’t love pancakes?! It may be one of my favorite breakfast foods. These pancakes are delicious and a healthier alternative to the usual sugar packed pancakes you’re probably used to. Throw some warm maple syrup on a stack of these bad boys and you won’t even miss the old pancakes you used to eat.
Ingredients:
- 1/4 cup + 2 TBS Tapioca Starch (or Arrowroot Powder)
- 1/4 cup + 1 TBS coconut flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp sea salt
- 3 large eggs
- 3/4 cup of sweet potato puree
- 1/3 cup unsweetened vanilla almond milk
- 2 TBS maple syrup
- 2 tsp vanilla extract
What to do:
- In a medium size bowl, mix together all of the dry ingredients
- In a separate large bowl, whisk together the wet ingredients
- Slowly add the dry ingredients to the bowl with the sweet potato mixture and mix well
- Let the pancake mixture set while you heat up your griddle to 350 degrees (or skillet over medium heat)
- Spray your griddle with cooking spray or melt butter or ghee over the top
- Pour enough batter onto your griddle (or skillet) to build the size of pancake you want (I like smaller ones to make a stack)
- Cook for about 5-7 minutes per side (these pancakes take a little longer to cook than regular pancakes)
