I’m starting to love eggs! Finally! I’ve been making quiche on Saturday mornings lately and have been loving it. They’re usually super easy to make and they feed us all weekend long! I typically just take any left overs from the week or Friday nights dinner and throw it together in a big batch of eggs and boom – a delicious quiche! This recipe followed a cauliflower pizza Friday night and it turned out delicious! Heated up very well on Sunday as well! Hope you enjoy!
Makes: 8 quiche squares
Total Time: 45 minutes
This weeks Ingredients:
- 8 eggs
- 1/4 cup of almond milk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- 1/2 tsp pepper
- 1/4 tsp basil
- 1/4 tsp oregano
- 1/4 tsp paprika
- 1 cup of saute mushrooms
- 1 red bell pepper roasted
- 10 large pepperonis cut up into small pieces (or 20 small)
- 2-3 TBS Raos Pizza sauce (I use this brand because it doesn’t have added sugar)
- 4 green onions
- Optional: a few dashes of your favorite hot sauce
What to do:
- Preheat your over to 400 degrees and line a 9×13 baking dish with parchment paper
- Crack eggs into a medium size mixing bowl and add almond milk
- Add all seasonings and mix well
- Over an open flame (or can use a skillet) roast your bell pepper until charred on all sides; flip the bell pepper often to get roasted on all sides
- Set pepper aside on a paper towel to cool
- In a small skillet saute the mushrooms; add to the egg mixture
- Cut up 7 of the large pepperonis into small pieces (10 for small pepperonis) and add to egg mixture; cut up the other 3 large pepperonis (10 small into halves) into quarters and set aside to go on top of quiche
- Once your bell pepper is cooled (shouldn’t take too long), use a paper towel to remove the charred skin and dice up into small pieces; add to egg mixture
- If you’re using hot sauce, shake a few dashes of it in now and mix well
- Pour egg mixture into your baking dish
- Pour the pizza sauce on top and mix in using a butter knife
- Top quiche with your pepperonis and bake for 30-35 minutes
- While quiche is cooking dice up green onions
- Once quiche is cooled, top with green onions and enjoy!
