Frog in a Hole

 

Makes: 2 Servings

Total Time:  5-10 minutes

Ingredients:
Toast
  • 4 pieces of toast
  • 4 eggs
  • salt and pepper
  • 1 shot glass
  • 2 TBS of ghee or butter
  • Bacon

Green Sauce

  • 1 avocado
  • juice of 2 limes
  • 2 tomatillos
  • 1 bunch of fresh cilantro
  • 1/2 tsp sea salt

What to do:

  • Line a baking sheet with some parchment paper and place your bacon on top
  • Put your bacon in a COLD oven
  • Set the oven to 400 degrees and set a timer for 18-20 minutes (check every minute at the 18th minute on until it’s as crispy as you like)
  • While bacon is baking, place all sauce ingredients into a blender and blend until smooth (may have to add water until it’s the consistency that you like); set sauce in fridge until you’re ready to use
  • Use the shot glass to press a hole out of the center of your bread
  • Heat 1 TBS of ghee (or butter) in a large skillet over medium heat
  • Place 2 slices of bread in the skillet and let toast for about 2-3 minutes
  • Flip your toast and crack an egg in the hole; season with salt and pepper
  • Remove your toast and set aside; repeat with the other two slices of bread
  • When your bacon is finished – chop it up into bite size pieces
  • Top your frog in the hole toast with your bacon and green sauce and enjoy!
