Makes: 4-5 servings
Total Time: 20-30 minutes
Ingredients:
- 1 lb of breakfast sausage
- 2 bell peppers
- 1.25 lb baby potatoes
- 1 TBS Avocado Oil
- 1 tsp Pink Himalayan Salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1/2 tsp paprika
- 1/2 tsp pepper
- 1 large handful of baby spinach roughly chopped
What to do:
- Dice potatoes into 1/4 pieces
- Dice bell peppers
- In a large skillet, heat avocado oil over medium heat (~265-275 degrees)
- Add potatoes and peppers and cook until fork tender
- Add sausage to the same skillet and cook until no pink remains
- Add all of the spices and mix well, decrease heat to low/simmer
- Roughly chop up the baby spinach and add into skillet; mix until spinach is welted
