Breakfast Sausage Bowls

Makes: 4-5 servings
Total Time: 20-30 minutes
Ingredients:
  • 1 lb of breakfast sausage
  • 2 bell peppers
  • 1.25 lb baby potatoes
  • 1 TBS Avocado Oil
  • 1 tsp Pink Himalayan Salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 1 large handful of baby spinach roughly chopped

What to do:

  • Dice potatoes into 1/4 pieces
  • Dice bell peppers
  • In a large skillet, heat avocado oil over medium heat (~265-275 degrees)
  • Add potatoes and peppers and cook until fork tender
  • Add sausage to the same skillet and cook until no pink remains
  • Add all of the spices and mix well, decrease heat to low/simmer
  • Roughly chop up the baby spinach and add into skillet; mix until spinach is welted
