Blueberry Donut Holes

If your office is anything like mine, you see donuts in the break room weekly. I’m pretty good at passing on these evil delicious breakfast treats but a girl can only take so much! So I decided to try and re-create a Paleo version of my favorite donut – the blueberrry donut hole. These definitely did the trick to satisfy my cravings. Hope you enjoy!


Makes: 30-40 donuts

Total Time: 30-35 minutes

Ingredients:

  • 2 cups almond flour
  • 1 TBS coconut flour
  • 2 teaspoons baking powder (or 1/2 tsp baking soda + 3 tsp lemon juice to be completely Paleo)
  • 1 teaspoon cinnamon
  • ¼ teaspoon kosher sea salt
  • ¾ cup almond milk
  • 2 large eggs
  • 1/4 cup of maple syrup
  • 1 teaspoon vanilla
  • 1 tablespoon palm shortening
  • 1 cup frozen blueberries
  • maple syrup for dipping

What to do:

  • Set out your frozen blueberries in a strainer to remove any water
  • Mix dry ingredients together in a mixing bowl
  • In a separate mixing bowl, mix the wet ingredients together
  • Pour the wet ingredients in with the dry and mix well
  • Fold in your blueberries
    • You could try and cut your blueberries in half first if you want smaller chunks of blueberries throughout the donuts
  • Use a spoon to pour batter into each hole and cook per your cake pop maker instructions
    • Note: I spooned out more mix into each hole than I usually do because these will not rise like cake pops would
  • Serve with warm maple syrup and enjoy!
