Date & Prosciutto Avocado “Toast”

Makes: 3 servings (two slices per person)

Total Time: 30 minutes

Ingredients:
  • 2 Sweet potatoes
  • coconut oil cooking spray
  • 2 avocados
  • salt and pepper
  • chopped prosciutto 
  • 6 large medjool dates

What to do:

  • Preheat your oven to 400 degrees
  • Slice your sweet potatoes into 1/2″ thick slices 
  • Place sweet potatoes on a cookie sheet and lightly spray with coconut oil spray and sprinkle with salt and pepper; bake for 15 minutes
  • Flip sweet potatoes over after 15 minutes and spray the other side and sprinkle with with salt and pepper; bake for another 10 minutes
  • While sweet potatoes are baking, mash your avocados in a bowl and season with salt, pepper, and a small dash of chili powder, garlic powder, and onion powder 
  • Chop up your prosciutto and slice your dates into small bite size pieces
  • Once sweet potatoes are done baking, spread the avocado mash onto the sweet potatoes and top with the prosciutto and dates and enjoy!
