Makes: 3 servings (two slices per person)
Total Time: 30 minutes
Ingredients:
- 2 Sweet potatoes
- coconut oil cooking spray
- 2 avocados
- salt and pepper
- chopped prosciutto
- 6 large medjool dates
What to do:
- Preheat your oven to 400 degrees
- Slice your sweet potatoes into 1/2″ thick slices
- Place sweet potatoes on a cookie sheet and lightly spray with coconut oil spray and sprinkle with salt and pepper; bake for 15 minutes
- Flip sweet potatoes over after 15 minutes and spray the other side and sprinkle with with salt and pepper; bake for another 10 minutes
- While sweet potatoes are baking, mash your avocados in a bowl and season with salt, pepper, and a small dash of chili powder, garlic powder, and onion powder
- Chop up your prosciutto and slice your dates into small bite size pieces
- Once sweet potatoes are done baking, spread the avocado mash onto the sweet potatoes and top with the prosciutto and dates and enjoy!
