Meal Prep Breakfast Quesadillas

Makes: 12 servings

Total Time: 45-50 minutes  


Ingredients:

For Breakfast Sausage: **

  • 1 lb mild sausage (or hot)
  • 1 tsp dried sage
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • pinch of dried marjoram
  • pinch of red pepper flakes
  • pinch of ground cloves

**Note: you could also just purchase breakfast sausage if you don’t have all of these ingredients – I just prefer to make my own

For Quesadillas:

  • 2 6-packs of tortilla shells (I use these gluten free shells)
  • 12 eggs
  • 2 cups of shredded cheese (Mexican blend)
  • 2 bell peppers
  • 2 jalapenos
  • 1.5 onion
  • 1 can of black beans (drained and rinsed)
  • 1 cup frozen corn (thawed)
  • Optional toppings: salsa, sour cream, pickled jalapenos, shredded lettuce, etc

What to do:

  • Pre-heat your oven to 400 degrees
  • Dice your veggies into small pieces and set aside
  • Mix your seasonings in with your sausage
  • Brown your sausage in a large skillet over medium high heat, crumbling it into small pieces until it’s done; use a slotted spoon to remove and set aside on a paper towel lined plate to soak up excess grease (leaving behind grease to cook veggies)
  • Add bell pepper, onion and jalapeno to the skillet and saute until soft (about 10 minutes)
  • Return meat to skillet and add rinsed beans and corn and mix well
  • Whisk your eggs in a large bowl along with salt and pepper
  • Add eggs to skillet and mix up until eggs are scrambled
  • Now assemble your quesadillas:
  • Lay out tortilla shell and sprinkle some cheese on half of it (your have 12 to make so use sparingly)
  • Spread some of your mixture onto the shell and and sprinkle some more cheese on top
  • Fold the shell over and repeat this step for 12 quesadillas
  • Bake for about 8-10 minutes or until cheese melts
  • Let quesadillas cool completely and then place them in your food containers for the week
  • To heat up your quesadilla – either place it in a convectional oven or toaster for about 10 minutes or longer until cheese melts or you can microwave them for about 30 seconds to 1 minute or until cheese melts
  • Serve with some salsa for dipping and enjoy!
