Makes: 6 servings
Total Time: 30-35 minutes
Ingredients:
- 1 lb breakfast sausage
- 1 bundle of kale
- 2 bell peppers
- 1/2 onion
- 3 turnip roots
- 4 large carrots
- 1/4 tsp chili powder
- 1/4 tsp turmeric powder
- salt and pepper
- olive oil
What to do:
- Dice your veggies into small pieces and remove kale from stems and chop up
- Brown and break up your breakfast sausage in a large skillet over medium-high heat
- Once breakfast sausage is done, remove it with a slotted spoon and set aside on a napkin covered plate to soak up the grease (leave excess grease in skillet to saute veggies – may have to add some olive oil if there wasn’t enough left behind)
- Add your bell pepper, onion, turnips, and carrots to skillet and saute until desired softness (10-12 minutes)
- Add back in your sausage and kale and spices and mix up well until kale is welted to your liking and enjoy!
