Breakfast Skillet

Makes: 6 servings

Total Time: 30-35 minutes  


Ingredients:

  • 1 lb breakfast sausage
  • 1 bundle of kale
  • 2 bell peppers
  • 1/2 onion
  • 3 turnip roots
  • 4 large carrots
  • 1/4 tsp chili powder
  • 1/4 tsp turmeric powder
  • salt and pepper
  • olive oil

What to do:

  • Dice your veggies into small pieces and remove kale from stems and chop up
  • Brown and break up your breakfast sausage in a large skillet over medium-high heat
  • Once breakfast sausage is done, remove it with a slotted spoon and set aside on a napkin covered plate to soak up the grease (leave excess grease in skillet to saute veggies – may have to add some olive oil if there wasn’t enough left behind)
  • Add your bell pepper, onion, turnips, and carrots to skillet and saute until desired softness (10-12 minutes)
  • Add back in your sausage and kale and spices and mix up well until kale is welted to your liking and enjoy!
