Makes: 2 servings
Total Time: 15-20 minutes
Ingredients:
- 2 TBS olive oil or melted ghee
- 1 lb grass fed ground beef
- 1 tsp cumin
- 3 tsp chili powder
- 1/2 tsp sea salt
- 1 TBS tomato paste
- 1/2 cup water
- iceberg lettuce
- cherry tomatoes
- jalapenos
- shredded cheese (optional)
Dressing
- 1/2 cup salsa
- 1 TBS sour cream
- splash jalapeno juice
What to do:
- Brown your meat in a medium skillet over medium heat until no longer pink
- Add cumin, 2 tsp of chili powder, 1/2 tsp salt and mix well
- Add tomato paste and mix well; simmer for 1 minute
- Add 1/2 cup of water and mix well
- Simmer for about 2-5 minutes until water has completely reduced and set aside
- Mix together your dressing ingredients in a small bowl and set in fridge
- Chop up some lettuce and place in a bowl
- Top your lettuce with some meat
- Chop up your tomatoes and jalapenos and add to your salad
- Top with some shredded cheese if you want and add some dressing and enjoy
