Taco Salad

Makes: 2 servings

Total Time: 15-20 minutes

Ingredients:

  • 2 TBS olive oil or melted ghee
  • 1 lb grass fed ground beef
  • 1 tsp cumin
  • 3 tsp chili powder
  • 1/2 tsp sea salt
  • 1 TBS tomato paste
  • 1/2 cup water
  • iceberg lettuce
  • cherry tomatoes
  • jalapenos
  • shredded cheese (optional)

Dressing

  • 1/2 cup salsa
  • 1 TBS sour cream
  • splash jalapeno juice

What to do:

  • Brown your meat in a medium skillet over medium heat until no longer pink
  • Add cumin, 2 tsp of chili powder, 1/2 tsp salt and mix well
  • Add tomato paste and mix well; simmer for 1 minute
  • Add 1/2 cup of water and mix well
  • Simmer for about 2-5 minutes until water has completely reduced and set aside
  • Mix together your dressing ingredients in a small bowl and set in fridge
  • Chop up some lettuce and place in a bowl
  • Top your lettuce with some meat
  • Chop up your tomatoes and jalapenos and add to your salad
  • Top with some shredded cheese if you want and add some dressing and enjoy
