Cod & Veggie Sheet Pan

Makes: 2 servings

Total Time: 25-35 minutes

Ingredients:

Veggies

  • 1 bunch of broccolini 
  • 1/2 pint grape tomatoes, halved
  • 1/2 red onion, peeled, quartered and cut into bite size wedges
  • 1/2 lemon, cut into thin rounds
  • 1.5-2 TBS olive oil
  • 1 tsp ground cumin
  • 1/2 tsp red pepper flakes
  • salt and pepper

Fish

  • 2 pieces of cod
  • 1.5 TBS olive oil
  • 1/2 lemon
  • sprinkle of cayenne pepper
  • Fresh basil (optional)

What to do:

  • Preheat oven to 400 degrees and line your baking sheet with parchment paper
  • Combine all ingredients for the veggies except for the lemon slices into a bowl and mix well
  • Spread out on your prepared sheet pan and spread the lemon slices around
  • Bake veggies for 10 minutes
  • While veggies are baking, pat the fish dry and season with olive oil, juice of the other 1/2 of lemon and cayenne pepper and set aside
  • After 10 minutes, pull the veggies out and stir up and separate them to each side
  • Place the fish in the middle and bake for another 10-20 minutes based on the size of your fish (you want your meat thermometer to read 125-130)
  • Plate your fish and veggies and top with fresh basil and enjoy!
