Total Time: 25-35 minutes
Ingredients:
Veggies
- 1 bunch of broccolini
- 1/2 pint grape tomatoes, halved
- 1/2 red onion, peeled, quartered and cut into bite size wedges
- 1/2 lemon, cut into thin rounds
- 1.5-2 TBS olive oil
- 1 tsp ground cumin
- 1/2 tsp red pepper flakes
- salt and pepper
Fish
- 2 pieces of cod
- 1.5 TBS olive oil
- 1/2 lemon
- sprinkle of cayenne pepper
- Fresh basil (optional)
What to do:
- Preheat oven to 400 degrees and line your baking sheet with parchment paper
- Combine all ingredients for the veggies except for the lemon slices into a bowl and mix well
- Spread out on your prepared sheet pan and spread the lemon slices around
- Bake veggies for 10 minutes
- While veggies are baking, pat the fish dry and season with olive oil, juice of the other 1/2 of lemon and cayenne pepper and set aside
- After 10 minutes, pull the veggies out and stir up and separate them to each side
- Place the fish in the middle and bake for another 10-20 minutes based on the size of your fish (you want your meat thermometer to read 125-130)
- Plate your fish and veggies and top with fresh basil and enjoy!
