Makes: 4 servings
Total Time: 30 minutes
Ingredients:
- 1 lb chicken breast
- 1-2 TBS olive oil
- 3 cloves of garlic, minced
- 2 bell peppers, thinly sliced
- 1 bundle of broccolini
- 1/2 onion, thinly sliced
- 1/2-1 tsp red pepper flakes (depending on how spicy you want it)
- sprinkle of ground ginger
- 1 box of Cappello’s fettucini (or whatever brand you like)
Sauce
- 5 TBS coconut aminos
- 2 TBS sriracha
- 1 TBS raw honey
- pinch of sea salt
What to do:
- Mince your garlic, slice your onions and peppers, roughly chop mushrooms and dice your chicken into small bite sized pieces
- Combine all of your sauce ingredients in a small bowl and set aside
- Heat olive oil in a large skillet over medium high heat
- Add your garlic and onions and saute for about 4 minutes; sprinkle with some ground ginger powder
- Add in your broccolini, bell peppers and red pepper flakes. Sprinkle with sea salt and pepper and saute for another 4 minutes
- While veggies are cooking, bring a large pot of water to a boil
- Add in your chicken and brown until they are fully cooked
- Just before chicken is cooked all the way through, add your frozen pasta to the water and cook it for 60 seconds
- Drain your noodles and add them to your veggies, top with sauce and mix everything together and enjoy!
