Ingredients:
- 1 lb chicken breasts, cut into strips
- 2 TBS olive oil
- 2 tsp chili powder
- 2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 tsp sea salt
- 1 can of diced tomatoes with green chiles
- 2 large bell pepper
- 1 large onion
- 2 serrano peppers (optional)
- large flour tortilla shells
- Toppings such as sour cream, cheese, salsa, hot sauce, jalapenos etc.
What to do:
- Preheat the oven to 400 degrees
- Cut your chicken in to small bite size pieces
- Mix olive oil, chili powder, cumin, garlic powder, oregano and salt into a large baking dish and add your chicken; set aside
- Slice your bell peppers and onions into strips and dice your serrano peppers; add all to baking dish
- Add can of tomatoes to dish and mix everything together very well – I use my hands to make sure everything is very well coated
- Bake for 50-60 minutes until chicken is cooked all the way through and veggies are tender to your liking
- Make your fajitas with all of your favorite toppings and enjoy!
