Oven Baked Chicken Fajitas

Makes: 6 servings

Total Time: 75 minutes

Ingredients:

  • 1 lb chicken breasts, cut into strips
  • 2 TBS olive oil
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp sea salt
  • 1 can of diced tomatoes with green chiles
  • 2 large bell pepper
  • 1 large onion
  • 2 serrano peppers (optional)
  • large flour tortilla shells
  • Toppings such as sour cream, cheese, salsa, hot sauce, jalapenos etc.

What to do:

  • Preheat the oven to 400 degrees
  • Cut your chicken in to small bite size pieces
  • Mix olive oil, chili powder, cumin, garlic powder, oregano and salt into a large baking dish and add your chicken; set aside
  • Slice your bell peppers and onions into strips and dice your serrano peppers; add all to baking dish
  • Add can of tomatoes to dish and mix everything together very well – I use my hands to make sure everything is very well coated
  • Bake for 50-60 minutes until chicken is cooked all the way through and veggies are tender to your liking
  • Make your fajitas with all of your favorite toppings and enjoy!
