Dairy Free Pesto

Makes: 1 cup

Total Time: 5 minutes

Ingredients:

  • 2 cups of fresh basil leaves
  • 3 TBS walnuts (or pine nuts if you’re feeling fancy; too rich for my blood)
  • 3 cloves of garlic grated
  • zest and juice from 1 lemon
  • 2-3 TBS nutritional yeast
  • 1/4 tsp sea salt
  • 3-4 TBS olive oil
  • water until you reach the consistency you like (took me about 5 TBS)

What to do:

  • Place all ingredients except the olive oil and water in your food processor and run on high
  • As your pesto is blending, slowly pour olive oil and water in and mix well
  • Use to marinate meat or as a pasta sauce or whatever your little heart desires and enjoy!
