Breakfast Hash

Makes: 4 servings

Total Time: 30 minutes

Ingredients:

  • 1 16 oz bag of frozen hashbrowns
  • 1 TBS ghee, melted or olive oil
  • 1 tsp chili powder
  • salt and pepper
  • 1 bell pepper
  • 1 onion
  • 1 serrano pepper
  • 8 oz mushrooms, roughly chopped
  • 4 sausage patties
  • 8 eggs

What to do:

  • Preheat the broiler and spray sheet pan with cooking spray or line with parchment paper or aluminum foil
  • Spread your hash browns out on the sheet pan and toss them with the olive oil or ghee and 1 tsp of chili powder and salt and pepper; mix well and lay out into a flat layer
  • Broil for about 8-10 minutes until browning
  • After about 10 minutes, stir up the hash browns with a spatula and return to broiler for another 6-8 minutes
  • While potatoes are broiling, dice your peppers, onion, mushrooms and sausage patties
  • Heat olive oil in a large skillet over medium high heat and add your veggies
  • Once veggies are sauted to your liking, add your meat and brown for about 2 minutes
  • Crack your eggs into a large bowl and add some salt and pepper and whisk up
  • Move your meat and veggies to the sides of the pan and pour in your eggs
  • Scramble until eggs are done to your liking and mix all together
  • Place some hashbrowns in a bowl and top with your egg and veggie mix and enjoy
