Pesto

Makes: 1 cups

Total Time: 5 minutes

Ingredients:

  • 1 cup arugula
  • 1 cup spinach
  • 3 TBS chopped walnuts
  • 2-3 TBS of grated Pecorino Romano or Parmesan
  • 1/4-1/2 cup of olive oil
  • 1 tsp sea salt
  • 1 clove of garlic, grated
  • 1/2 tsp ground black pepper
  • zest and juice from 1 lemon

What to do:

  • Place all ingredients except the olive oil in your food processor and run on high
  • As your pesto is blending, slowly pour olive oil in to mix well
  • Use to marinate meat or as a pasta sauce or whatever your little heart desires and enjoy!
