Makes: 1 cups
Total Time: 5 minutes
Ingredients:
- 1 cup arugula
- 1 cup spinach
- 3 TBS chopped walnuts
- 2-3 TBS of grated Pecorino Romano or Parmesan
- 1/4-1/2 cup of olive oil
- 1 tsp sea salt
- 1 clove of garlic, grated
- 1/2 tsp ground black pepper
- zest and juice from 1 lemon
What to do:
- Place all ingredients except the olive oil in your food processor and run on high
- As your pesto is blending, slowly pour olive oil in to mix well
- Use to marinate meat or as a pasta sauce or whatever your little heart desires and enjoy!
