Makes: 9 slices of bread
Total Time: 1 hour + cool down time
Ingredients:
- oil spray (I used coconut oil spray)
- 3 large very ripe bananas
- 3 eggs
- 1 TBS vanilla extract
- 2 TBS honey
- 2 cups almond flour
- 1 TBS ground cinnamon
- 1 tsp baking soda
- 1/4 tsp kosher salt
What to do:
- Preheat oven to 350 degrees and line a loaf pan with parchment paper
- Spray the paper lightly with your oil
- In a medium bowl, mash your bananas until mushy
- Add in your eggs and whisk together
- Mix in your vanilla and honey
- Gradually whisk in almond flour, cinnamon, salt, and baking soda. Whisk until smooth
- Transfer the bread mixture to your loaf pan tapping it lightly on the counter to even out the mix
- Bake for about 45-50 minutes. You’ll know it’s done if you can poke it with a toothpick or butter knife and they come out clean
- Use the parchment paper to help you pull the bread out and lay it on a wire rack (or just your stove top if it’s raised) to cool for 45 minutes to an hour before slicing
- Store your bread in a container with strips of parchment paper between each layer
