Paleo Banana Bread

Makes: 9 slices of bread

Total Time: 1 hour + cool down time

Ingredients:

  • oil spray (I used coconut oil spray)
  • 3 large very ripe bananas
  • 3 eggs
  • 1 TBS vanilla extract
  • 2 TBS honey
  • 2 cups almond flour
  • 1 TBS ground cinnamon
  • 1 tsp baking soda
  • 1/4 tsp kosher salt

What to do:

  • Preheat oven to 350 degrees and line a loaf pan with parchment paper
  • Spray the paper lightly with your oil
  • In a medium bowl, mash your bananas until mushy
  • Add in your eggs and whisk together
  • Mix in your vanilla and honey
  • Gradually whisk in almond flour, cinnamon, salt, and baking soda. Whisk until smooth
  • Transfer the bread mixture to your loaf pan tapping it lightly on the counter to even out the mix
  • Bake for about 45-50 minutes. You’ll know it’s done if you can poke it with a toothpick or butter knife and they come out clean
  • Use the parchment paper to help you pull the bread out and lay it on a wire rack (or just your stove top if it’s raised) to cool for 45 minutes to an hour before slicing
  • Store your bread in a container with strips of parchment paper between each layer
