Chicken Avocado Wraps

Makes: 4 servings

Total Time: 20 minutes

Ingredients:

  • 2 large chicken breasts seasoned with salt and pepper
  • 4 tortilla wraps
  • oil, butter, or ghee
  • shredded cheese (we used the Mexican blend)
  • 1 large avocado
  • 2 small/medium tomatoes
  • 2 TBS sour cream
  • 1/4 cup fresh chopped cilantro
  • salt and pepper

What to do:

  • Season your chicken with salt and pepper and grill on high heat for about 7-10 minutes per side until your meat thermometer reads 160-165 and set aside to rest
  • While your chicken is resting, dice your tomatoes and avocado and mix in a bowl with the sour cream and fresh cilantro with some salt and pepper
  • Slice your chicken into really thin strips and add to the bowl with your avocado mixture and mix very well – you may need to add more sour cream to get everything well mixed
  • Heat your fat in a large skillet over medium heat and assemble your wraps
  • Lay out your tortilla shell and add some shredded cheese, put 1/4 of your mixture on top of the cheese and roll them up (see my pics below for guidance)
  • Heat your wraps for about 2 minutes per side making sure not to burn them
  • Serve warm and enjoy!
  • You can also freeze these and heat them up throughout the week for meal prep if you’d like!
