Bacon Skillet

Makes: 4 servings

Total Time: 30 minutes

Ingredients:

  • 1 pack of bacon
  • 1 pack of baby potatoes (or 2 large potatoes)
  • 1/2 onion
  • 1 red bell pepper
  • 1 pack of cherry tomatoes
  • 2 large handfuls of baby spinach
  • 1 TBS fresh dill
  • 1/2 TBS garlic powder
  • juice of half a lemon
  • salt and pepper

What to do:

  • Dice your potatoes, onion, and bell pepper into bite size pieces
  • Cut your tomatoes in half and chop up your baby spinach and dill
  • Heat a large skillet over high heat and cook your bacon strips until the desired crispiness and set aside, leaving your bacon grease behind to cook with
  • Add in your potatoes and season with some salt and pepper (if there’s not enough bacon grease left over you may need to add some olive oil)
  • Once potatoes can be easily pierced with a fork, add onion, bell pepper, dill and garlic powder and saute until peppers and onions are softened (about 5-10 minutes)
  • Add in your spinach and mix everything together until spinach is wilted
  • Add in tomatoes, cooked bacon, and some lemon juice and mix everything together
  • Serve hot and enjoy!
