Makes: 4 servings
Total Time: 30 minutes
Ingredients:
- 1 pack of bacon
- 1 pack of baby potatoes (or 2 large potatoes)
- 1/2 onion
- 1 red bell pepper
- 1 pack of cherry tomatoes
- 2 large handfuls of baby spinach
- 1 TBS fresh dill
- 1/2 TBS garlic powder
- juice of half a lemon
- salt and pepper
What to do:
- Dice your potatoes, onion, and bell pepper into bite size pieces
- Cut your tomatoes in half and chop up your baby spinach and dill
- Heat a large skillet over high heat and cook your bacon strips until the desired crispiness and set aside, leaving your bacon grease behind to cook with
- Add in your potatoes and season with some salt and pepper (if there’s not enough bacon grease left over you may need to add some olive oil)
- Once potatoes can be easily pierced with a fork, add onion, bell pepper, dill and garlic powder and saute until peppers and onions are softened (about 5-10 minutes)
- Add in your spinach and mix everything together until spinach is wilted
- Add in tomatoes, cooked bacon, and some lemon juice and mix everything together
- Serve hot and enjoy!
