Lasagna Skillet

Makes: 4 serving

Total Time: 30 minutes

Ingredients:

  • 1 lb ground beef (or turkey)
  • olive oil
  • 1 tsp Italian seasoning
  • salt and pepper
  • 1/2 onion
  • 1 box of veggie pasta or whole wheat pasta
  • 15.5 oz jar of Raos Marinara (or your favorite marinara)
  • 1.5 cup of water
  • Couple handfuls of spinach
  • 1/2 – 1 cup shredded mozzarella
  • Chopped fresh parsley (optional)

What to do:

  • Preheat your broiler
  • Dice your onion into small pieces and chop your spinach
  • Heat olive oil in a large skillet over medium heat and add your onions; saute for 3-5 minutes
  • Add your beef and ground up until no longer pink
  • Add salt, pepper, and Italian seasoning and mix up
  • Add in your pasta, marinara and water and mix up; simmer for 10-15 minutes or until the pasta is to your liking
  • Add your spinach and mix well for about another minute or so
  • Sprinkle on your shredded cheese and broil for 2-3 minutes or until cheese is melted and beginning to brown
  • Sprinkle on some fresh parsley and enjoy
