Hasselback Potatoes

Makes: 3-4 servings

Total Time: 45-60 minutes

Ingredients:

  • 6 medium size potatoes
  • 2 garlic cloves
  • 2 TBS olive oil
  • 1 TBS fresh chopped rosemary
  • 1 tsp red chili flakes
  • generous amount of salt and pepper

What to do:

  • Preheat your oven to 400 degrees
  • Wash and dry your potatoes
  • Cut slits into your potatoes about 3 mm spaced apart – not all the way to the bottom (see pic below)
  • Combine all of your other ingredients in a small mixing bowl and brush it onto your potatoes making sure to get it in the slits you created in the last step
  • Bake for about 45-60 minutes and enjoy
