Mexican Chicken

Makes: 4 servings

Total Time: 30 minutes

Ingredients:

  • 4 large chicken breasts
  • 3 TBS olive oil
  • 2 garlic cloves minced
  • 1/4 cup of cilantro chopped
  • juice of 1 lime
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp sea salt
  • 1/4 tsp pepper

What to do:

  • Place chicken breasts on a large cutting board and cover with plastic wrap and pound until the chicken breasts are the same thickness throughout; you can skip this step but it helps the chicken cook evenly and makes it juicy and tender
  • Place the chicken breasts in a large zip lock bag and add all of the ingredients and shake up until the chicken is evenly coated
  • Set chicken in the fridge to marinate for about 30 minutes or longer
  • Heat your grill to high heat and grill for about 7-8 minutes per side or until the meat thermometer reads 165 degrees
  • Serve with one of my tasty side dishes and enjoy!
