Makes: 4 servings
Total Time: 30 minutes
Ingredients:
- 4 large chicken breasts
- 3 TBS olive oil
- 2 garlic cloves minced
- 1/4 cup of cilantro chopped
- juice of 1 lime
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp sea salt
- 1/4 tsp pepper
What to do:
- Place chicken breasts on a large cutting board and cover with plastic wrap and pound until the chicken breasts are the same thickness throughout; you can skip this step but it helps the chicken cook evenly and makes it juicy and tender
- Place the chicken breasts in a large zip lock bag and add all of the ingredients and shake up until the chicken is evenly coated
- Set chicken in the fridge to marinate for about 30 minutes or longer
- Heat your grill to high heat and grill for about 7-8 minutes per side or until the meat thermometer reads 165 degrees
