Bacon Kale


Makes: 4 servings

Total Time: 10-15 minutes

Ingredients:

  • 1 head of kale
  • 4-5 strips of bacon
  • juice of 1/2 lemon
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp red pepper flakes
  • salt and pepper

What to do:

  • Remove the kale from the stems and chop up 
  • Cut your bacon into small bite size pieces
  • Heat a skillet over medium-high heat and cook your bacon pieces until they crisp up to your liking
  • Remove your bacon pieces and set aside on a paper towel covered plate; keep the bacon fat in skillet
  • Turn the heat to low and CAREFULLY add your kale to the  skillet – the bacon grease will pop
  •  Add your lemon juice and spices and mix around until kale is wilted to your liking
  • Turn the heat off and mix back in your bacon and serve warm
