Shrimp & Veggie Foil Packets


Makes: 4 serving

Total Time: 30-40 minutes

Ingredients:

  • 1 lb of frozen peeled and deveined shrimp; thawed
  • 1 cup of cooked rice (or you can use left over rice)
  • 1/4 cup coconut aminos
  • 1 TBS ginger powder
  • 1 TBS sesame oil
  • 1 TBS white wine vinegar
  • 2 tsp raw honey
  • 2 garlic cloves – grated or minced
  • pinch of red pepper flakes
  • 1 large zucchini (or two small)
  • 1/2 lb fresh green beans
  • aluminum foil
  • cooking spray

What to do:

  • In a shallow dish, whisk together the coconut aminos, ginger powder, sesame oil, white wine vinegar, honey, garlic cloves, and red pepper flakes
  • Remove the tails from your shrimp and place them in the dish; mix together very well and place in the fridge while you prepare the rest of the meal
  • If you don’t have pre-cooked/left over rice – make your rice according to the directions on the packet
  • Pre-heat your grill to a medium high heat
  • Dice your zucchini up into quarters; set aside
  • Prepare your green beans by breaking off the ends and breaking them into small bite size pieces; set aside
  • Lay out 4 large pieces of aluminum foil and spray each with cooking spray
  • Layer your packets evenly with rice then veggies then shrimp; top each packet with left over sauce from the shrimp marinade
  • Fold up the packets tightly but leave a little opening at the top of each for steam to release 
  • Place your packets on the grill and close the lid; grill for 12-15 minutes
  • Open the packets carefully because they will let out a lot of steam
  • Enjoy!
